Eggless Chocolate Cake is a tasty treat made of healthy ingredients like oats, dates, curd.
People with Diabetes who have HbA1c less than 7 can enjoy this.
Serving size: 6
- Date -1/2 cup (8-10 Dates)
- Hot milk for soaking – 1 +1/4 cup for soaking
- Oil -1/4 cup
- Curd/Yoghurt – ¼ cup
- Oats flour -1 cup
- Baking powder-1/2 tsp
- Baking soda -1/4 tsp
- Non sweetened Cocoa powder -2 tbsp
- Salt-pinch of salt
- ½ tsp vanilla essence
Steps:
- Soak Dates in milk for 30 minutes. After this blend soak dates with milk ,remove seeds from dates before blending.
- Add curd + oil + vanilla essence to the blending jar and blend again. Transfer it to a big bowel.
- Now Sieve oats flour + Baking powder +Baking soda + Cocoa powder together with seiver and add it to bowel.
- Add almonds and Mix it well with a flat spatula /spoon . Top up the batter with some sugar chocolate chips.
- Transfer the mixture in baking pan with parchment paper at the base or grease the baking pan with refined oil and flour, dust the extra flour.
- Bake it pre –heat oven for 30-35 min at 180*c.
- Cut the loaf into 6 pieces. Serve warm.
