Recipe: Dessert for people with Diabetes

Eggless Chocolate Cake is a tasty treat made of healthy ingredients like oats, dates, curd.

People with Diabetes who have HbA1c less than 7 can enjoy this. 

Serving size: 6

  1. Date -1/2 cup (8-10 Dates) 
  2. Hot milk for soaking – 1 +1/4 cup for soaking  
  3. Oil -1/4 cup 
  4. Curd/Yoghurt – ¼ cup
  5. Oats flour -1 cup
  6. Baking powder-1/2 tsp 
  7. Baking soda -1/4 tsp 
  8. Non sweetened Cocoa powder -2 tbsp 
  9. Salt-pinch of salt 
  10. ½ tsp vanilla essence

Steps:

  1. Soak Dates in milk for 30 minutes. After this blend soak dates with milk ,remove seeds from dates before blending. 
  2. Add curd + oil + vanilla essence  to the blending jar and blend again. Transfer it to a big bowel.
  3. Now Sieve oats flour + Baking powder +Baking soda + Cocoa powder together with seiver and add it to bowel.
  4. Add almonds and Mix it well with a flat spatula /spoon . Top up the batter with some sugar chocolate chips. 
  5. Transfer the mixture in baking pan with parchment paper at the base or grease the baking pan with refined oil and flour, dust the extra flour.
  6. Bake it pre –heat oven for 30-35 min at 180*c. 
  7. Cut the loaf into 6 pieces. Serve warm.
